Hawthorne Valley Farm, a pioneer in organic dairy, provides its cows a natural, grass-based diet year-round. Some of the milk from our dairy herd is sold raw in our farm store, while the rest is transformed by our creamery into a range of products including yogurt (Plain, Maple, Honey, Coffee), aged raw milk cheeses (Alpine, Aged Alpine, Caraway Alpine, Garlic Alpine), soft cheeses (Fern Hill, Luna), and specialty items like Dill Havarti, Gouda, and Cheddar. All products are certified USDA organic and Real Organic certified, with Alpine and plain yogurt also certified Biodynamic®. Our raw milk and raw milk cheese are also certified Animal Welfare Approved.

Hawthorne Valley Farm proudly raises livestock for meat, including cows, pigs, and chickens. The Farm’s pasture-raised meats are available for purchase in our Farm Store, though availability may vary. We offer a variety of cuts from the farm’s beef animals, including steaks like filet mignon, NY strip, boneless sirloin, stew meat, and ground beef. We also offer bones, bone-in short ribs, and organs. The Farm’s beef is certified organic by NOFA-NY and the Real Organic Project, Biodynamic by Demeter USA, and Animal Welfare Approved. The Farm’s pastured, whey and milk-fed pork is available year-round in the Farm Store. You’ll typically find pork chops, four types of sausage, ground pork, and smoked bacon (with no added sugar). The Farm’s pigs are raised following organic standards. Additionally, the Farm’s certified organic, pasture-raised chicken is available at the Farm Store during the growing season. We offer whole and half chickens. Necks, livers, and feet are available upon request. We look forward to serving you with our Farm’s high-quality, responsibly raised meats!

Is your milk A2?

No. In order for milk to be considered A2, each cow in the herd must be tested for this genetic marker. While the Brown Swiss breed has a higher rate of this gene, and this breed is dominant among our herd, there are many other breeds mixed in.

Can I buy your raw milk at the NYC greenmarkets?

It is illegal to sell raw milk off of the farm in New York State, so we are not able to sell it at any of our Green Market locations.

What is Quark?

A fresh, fermented, spreadable cheese made from our organic cow’s milk. Many people use it in place of sour cream, ricotta, or cottage cheese. It is similar to fromage blanc. Quark is not widely available in supermarkets, but we make it fresh here in our creamery and you can buy it in our farm store.

High in protein, quark can be a healthy addition to one’s diet. It has many benefits, including:

  • Gut health: As a fermented product, quark can help replenish beneficial bacteria in the gut.
  • Protein: Quark can be a great snack option or a way to add protein to vegetarian meals. Its protein content can help you feel full, which can help prevent eating between meals.
  • Minerals: Quark is high in calcium, which is important for bone and teeth health. It also contains potassium, vitamin A, B vitamins, phosphorus, and vitamin D.
  • Low in fat and salt: Quark is virtually fat-free and has no added salt, making it a good choice for athletes who don’t want to reserve liquids or consume unhealthy fats.

Are any of the breads made in your bakery gluten free?

All of our baked goods contain some gluten, some people with wheat sensitivities find that they enjoy our sourdough rye breads and/or our granolas. Although spelt is a close relative of wheat, sourdough spelt can also be a good alternative for some people.
