One of the first to be certified organic in the United States, our creamery currently produces raw milk (available in the store); soft cheeses including Bianca and May Hill; aged raw milk cheeses including cheddar and alpine; buttermilk, ricotta, whey, and three flavors of yogurt: plain, strawberry, and lemon. Our sauerkraut cellar has been making organic, hand-crafted, lacto-fermented vegetables since 1999. Lacto-fermentation preserves nutrients and vitamins in the vegetables, and creates beneficial enzymes and probiotics.
